Tamarisk is our restaurant and bar set at the highest point of the valley, with an open promenade overlooking the hills of the Eastern Desert, the sea, and our botanical gardens.
The menu draws from Egypt’s wide culinary landscape, shaped by regional depth and exchange. It was built through shared knowledge: cooks and chefs bringing forward the recipes they grew up with, from homes and regions across the country. These dishes were tested, refined, and quietly elevated in our kitchen. The food recalls an Egyptian grandmother’s table—comforting, familiar, and nourishing. Time-honored staples such as molokheya, mahshi, and slow-cooked stews form the heart of the menu, prepared by our team with care and guided by seasonality.
The bar serves a selection of local alcoholic drinks and cocktails. By the pool, Medemia Café offers light snacks, drinks, and signature cocktails throughout the day.
